Gingerbread Dough
1/4 cup green banana flour
1/4 cup coconut flour
1 tsp. Vegetable oil
3/4 cup sugar equivalent
1/2 tsp. Baking Soda
1 tsp. Salt
1/2 tsp. Ground Cinnamon
1/2 to 1 cup water
1/4 cup sugar free maple syrup
Mix dry ingredients
Add 1/2 cup of water plus syrup
Plus enough water to make soft pliable
Firm Dough
You can use this for cut out cookies.
You can roll into balls and flatten before using the cutters on each mound
If you find that easier. The last of the dough can remain in uncut circles to have the shape of a Pitter Patter.
Baking can be done in an oven or on the stove in a dutch oven.
Butter some foil and line the pan you use with the foil. Bake until the cookies are firm around 12 minutes at medium.
Don't bake at high heat. If you like it crisper leave the heat alone and increase the time.

Butter Peanut Cookies (egg-free)

I have a new recipe for egg-free cookies. I am really surprised how good they taste. This one is buttery peanut butter.
6 TB 70 calorie margarine
1/2 cup plus 2 TB of peanut butter preferably Natural
1/2 cup Splenda or = valent
2 tsp milled flax seed
1 tsp water
1 1/2 tsp baking soda
1 1/2 TB imitation low calorie mayonnaise (heaping TB)
1/3 cup nonfat dry milk powder like Sego or Carnation
Combine everything in a small to medium sized bowl
Drop by half TB onto baking pan and bake at 350 degrees F until set like a toll house cookie, 8 minutes or so.
Remove from pan carefully with a metal spatula.

Makes about 30 cookies.
45 calories ea. but only 2.5 carb. Gr.
I always like a couple of these, three if I'm famished with vanilla yogurt or vanilla yogurt with frozen berries, sugar less versions of all. It is very filling. A splurge and a great meal substitution, protein, milk and fruit all at once.

Cream Cheese Cookies

3 ounces of cream cheese
4 TB 70-80 calorie a TB margarine
1 egg
5 TB Sego Buttermilk (non-fat dry buttermilk that reconstitutes into buttermilk) mix
Baking powder 1 Tb
Artificial Sweetener equivalent to 2/3 cup sugar
1 tsp. vanilla
Baking Sheet
350 degree oven.
Mix and spoon onto baking (cool) sheet
Bake 6-8 minutes
Makes about 30 cookies, 25 calories each and 3 grams carbohydrate

High Protein Cookies

1/4 cup peanut butter
1/8 cup miracle whip equivalent (60-70calories)
1 TB baking powder
1/4 cup buttermilk baking & drink mix
1/3 cup equivalent sweetening e.g. splenda, sweet 'lo, etc.
1 tsp salt
Bake at 350 degrees or 9 minutes or so slightly underdone but tops dry and centers hot.
Cool (if desired ha)
Makes 24 2 inch cookies, 25 calories each, 2 grams carbohydrate and 1.75 grams protein
Super good, as the carbohydrate watcher will especially love this, good for non dieters also

No Drudge-Fudge Cookies
Another Recipe~
1 stick blue bonnet * 80 cal TB
2/3 cup buttermilk baking mix (dry milk powder-this is by Sago it is not a flour product)
Sweetening equivalent to 2/3 cups sugar (Splenda, sweet'n lo, Equal etc)
1/3 cup hershey's cocoa powder
1 egg (lg)
1 TB baking powder
1 TB low calorie mayonnaise or miracle whip
2 tsp. salt
1/2 tsp baking soda
Mix together and bake at 350 degrees for 8 to 11 minutes. Do not overbake, leave soft,. Cool and store in plastic container in the freezer. Great frozen or thawed.
(Dropping by one TB) onto ungreased pan.
Do it in the toaster oven in a pie pan, 6 at a time.
