Joy Pie

1 Recipe Chocolate Pudding
1 recipe fudge cookies
shredded coconut, slightly sweetened or unsweetened--8 grams carb for 2 Tb.
Sugar Free Hersheys chocolate syrup or equivalent

Make pudding into frozen squares by putting into divided plates --sectioned plates or plastic storage containers with divisions

Crumble some cookies over each square--about 1/3 to 1/2 cookie per square
Freeze

Before eating top with a 'cool whip' type product, coconut, syrup and another cookie.
Can use the Cream Cheese or PB Cookies too.
That is a wiseman and 'Jesus' in plastic canvas needlepoint behind the pie.

Peppermint Icebox Cheesecake

1 8 oz package of fat-free cream cheese
3/4 cup half and half divided

about 1/3rd of an 8 oz container of whipped topping
sweetener to equal 2/3 cup of sugar
1 to 2 caps of peppermint extract--Watkins imitation
1/2 box sugar free vanilla or French vanilla instant pudding and pie filling(4srvg.)
 8 inch round pie pan
non-stick cooking spray

soften cream cheese to room temperature

add 1/4 cup half and half blend with hand mixer until smooth on low to medium speed add peppermint extract and sweetening

combine instant pudding in another bowl with 1/2 cup of half and half

Add whipped topping, a small amount to pudding, mix lightly
Add this to cream cheese, combine, add rest of whipped topping (Cool Whip) to this from the rest of the 8 oz tub, reserve a little if you want to decorate the top, also don't use the entire package if you want a denser dessert.
Spread in 8 inch pie pan that is prepared with non-stick coating.
Dust with cocoa powder and a packet of splenda.

Refrigerate or freeze if not eating right away.

Crash Diets For Before and After ShinDigs. Galacticas and Various Other Bashes

Crash Diet One:
twice a day-2/3rd cup of low fat cottage cheese with one cup of frozen berries, especially strawberries, unlimited diet soda, coffee with low calorie sweetener, water low calorie lemon tea, chicken or beef broth, pickles, cucumbers or raw tomatoes, two boiled eggs anytime you want. Salt, seasoned salt, cinnamon, garlic or nutmeg.

Crash Diet Two:
Two Seasoned Rye-Krisp crackers spread with two teaspoons of peanut butter, two to three times a day, unlimited diet soda, coffee as before, water, low calorie lemon tea, low calorie peach beverage or low calorie sugar free Hawaiian Punch. Two boiled eggs anytime you want. Salt, pepper.

Crash Diet Three:
Fruit Smoothie: 2/3rd frozen banana in chunks, 2/3 cup water, several ice cubes, sweetener with no calories, 1/4 tsp. unsweetened cherry koolaide, 1 tb frozen unsweetened pineapple juice concentrate, a little vanilla extract if desired.
Have a pitcher of this twice a day. For supper  have a tossed salad with lettuce cucumber and a 4-5 oz well done hamburger dressed with low calorie salad dressing. Unlimited diet cola and coffee. If this is too hard, save an ounce of well done hamburger and smear with 2 teaspoons of peanut butter at bedtime so you can sleep. No eggs today.


These quickie diets are good anytime you don't want to gain an ounce at the moment.

Vanilla Floating Islands



3 Eggs--separated
1 1/4 cups evaporated skim milk
sweetener equal to 1-1/2 cups sugar--
6 cups water (add up to two more cups if this is too thick--pie can be frozen and eaten like an ice cream bar)
1 Tb salt
4 0z corn starch
1 Tb vanilla
1 Tb margarine
See NOTE

mix milk, sweetener, salt and water --less 1 cup into a good sized pan, mix this cup with c starch and gradually stir into the liquid in the sauce pan or large skillet, heat to a simmer, add beaten yolks--heat to a boil and boil one minute or so while stirring-add butter and vanilla

Beat egg whites until stiff add 1/4 tsp salt stir 2 turns lightly-- Bake in 350 degree oven 40 minutes--until golden--let sit in oven 20 more minutes.

Pour pie filling into two 9 inch round or square pans
Tear meringue 'shells' into small pieces or 'cubes' and scatter over top.
Chill
Add toppings of cool whip or sugar free Hersheys chocolate syrup if desired.

NOTE:Add 2 Tb of ground flax if you like--it will be more earthy in coloration--left without the flax it's angelic looking--

How to Make a Diet Pumpkin Pie for the Holidays

1 can of pumpkin puree--Libby's solid pack pumpkin
3 whole eggs or even 4
1 1/2 Tb flour
sweetening equivalent to 1 1/3 cups of sugar
1 tb of maple extract
1 tsp vanilla extract
1/4 tsp salt, plus, curry powder, cinnamon and nutmeg-- or pumpkin pie spice a total of 2 tsps.
6 oz. of toasted coconut if wanted

This photograph has a rich, velvety center which is what you will get with this recipe, choose an aluminum or glass pie plate or even a glass cake or loaf pan in an average size so you can pour the filling a little thick. Just like this without the crust.

Line square pan with butter or margarine,
Combine filling ingredients-- add 1/2 package of instant vanilla sugar free pudding 4 serving size instead of vanilla extract or 1/2 package of butterscotch instant sugar free Jello pudding mix instead of the maple extract if desired-- either way mix the filling ingredients, stirring the eggs well, (all but the coconut) and pour into pan with or without coconut 'crust.'

Bake at 350 to 375 degrees for 45 to 55 minutes until a toothpick comes clean when tested.
Refrigerate leftovers this will firm up into a pudding cake kind of treat or freeze in squares like an "Eskimo pie" treat.

Drunken Jello [Almost]

1 Bundt pan with Teflon coating and vegetable cooking spray coat
4 packages of Knox unflavored gelatin
3/4 cup of water
1 10 inch fry pan
2 1/2 Tablespoons of sugar free Hersheys syrup
a scant 6 cups of sugar free carbonated cream soda

Dissolve gelatin in water in skillet
Heat to low and let the gelatin dissolve
Add chocolate syrup and stir until fully incorporated
Add soda-- preferably chilled first
Pour the mixture into the Bundt pan

Add cool whip of your choice when serving. The image is only representative to the recipe (it does look about like this when served with topping)

Healthy Flax

forget you can use flax in place of eggs or fat. I had super results with this flax seed product. Just follow the directions on the box. Basically 2 tsp flax milled and 1 tsp water is one egg and 3 TB Flax and  is  1 - 2 Tb fat. This is the ratio I use and it works perfectly.

Green Macaroni and Cheese

1 pound of fresh green beans or 2 16 oz. cans drained whole, cut, or French
2-3 TB of juice from the cans or chicken bouillon
3 to 5 oz of process cheese -- singles or boxed like Velveeta
1/2 tsp of salt with canned beans, 1 1/4 tsp salt with fresh beans
dash of pepper
skillet wide topped 10-12 inches or more
spray Pam or other vegetable or olive oil spray can be butter flavored

Coat skillet, add other ingredients, warm until cheese melts and beans are at least semi limp, the canned beans need not be any softer.

Cheese-y

Serve with sliced tomatoes and salt/pepper, french dressing- with vegetarian bacon chips.

This should make three generous servings of Fake Mac & Cheese, but it is so low calorie have all you like.

Mushroom Tuna Luncheon Salad


In order to make this 'salad' you need a can of mushrooms, boiled eggs, a can of tuna and mayonnaise. This concoction will also ask for seasoned salt and a small amount of sweetening. It is faster and easier than a tuna noodle casserole, it is more slimming since the noodles are omitted and it is cooler to prepare and eat in the summer than the casserole is. It also really tastes like a tuna noodle casserole when you have finished. Yumm.

Yogurt Decadante


Can you see the strawberry hiding under the yogurt? Chocolate fudge cookies on the side are yummy too, recipe is in an earlier blog post. Also use mixed berries if you want to.


Mix some fruit flavored YOGURT (no bits of fruit please, smooth is better here) and cool whip and top everything with some of the yogurt that isn't mixed with the topping. Voila.

p.s. FREEZE the strawberries first.

Root Beer Float with a Twist


You've got to try this *smashing* Black Cow soda, with Root Beer and Praline|butter Pecan Blue Bunny ICE Cream.


2 small scoops of ice cream
1 dollop of low fat frozen non-dairy topping
Root Beer
Additional vanilla extract and a pinch of Stevia or Splenda.

Glass, a tall thin glass, a maragarita glass, a wine glass, a parfait glass or something like that, even a styrofoam cup, so it stays chilled. Do you have one of those insulated tumblers from WalMart? That's good.




Line up the 1/2 - 1/3 cup of ice cream into two or three scoops, top with one or two spoons of cool-whip and add Root Beer to Cover. Use a tall teaspoon and two or three -- or just one straw -- whatever you think is fun.

Summer ICE!


Try adding 1/2 a pkt. of this to 16-18 oz of diet cola. Amazing. One more way to cool away summer. I think this tastes like watermelon & pineapple with maybe a little mango and it is cold... tasting, I find it unbelievable. One pink measuring spoon of sweet 'n low can be added (part of and individual pack -- it won't take much).

Chocolate Stovetop Custard


4 oz cornstarch
8 TB cocoa
10 cups water
2/3 cup non-fat dry milk or 1 cup evaporated skim milk
2 Tb ground flax seed
8 tsp. sweet' n low bulk
1 Tb salt
1/2 tsp. vanilla extract
1 1/4 cup water for dissolving corn starch

Large sauce pan that will hold 12-14 cups

Put water, milk, flax, cocoa, sweet 'n low and salt in large sauce pan or Dutch oven, do not use Pyrex it gets too hot. Mix corn starch into the additional 1 1/4 cups of water at end of ingredient list. Stir both mixtures with wire whisk whisking the cornstarch and water until dissolved, turn on heat and whisk the dissolved cornstarch into the chocolate milk mixture in the sauce pan. Bring to a boil stirring with a wire whisk and a large spoon until the mixture has boiled one minute.

Makes 12 cups plus.

Faux Pepsi Max

16 0z. diet cola ice cold
1/2 teaspoon of fruit punch flavored powdered soft drink mix such as Kool-aide
2 1/2 packets of an artificial sweetener such as splenda, sweet 'n lo or Fasweet
ice cubes 3 or 4
2 straws

Combine everything in a tall tumbler and stir. Get high.

Berry Banana Sherbert

This is kind of like a Smoothie, but you don't have to get out the blender or smoothie machine every time.

4-6 cups of seeded watermelon
1-2 cups fresh or frozen strawberries (hulled)
optional``substitute more watermelon``
1 cup of whole milk (or at least 2%) This won't taste 'milky--either way.'
1 cup orange juice
3-4 bananas (I always use 4)
sweetener equal to 15 pkgs.
1 TB lemon juice
Mash all together with a potato masher or back of a large spoon
Freeze in ice cube trays or Popsicle molds or used yogurt cups etcetera. Insert a plastic picnic spoon if you don't have anything else.
The first two ingredients are flexible, the rest are not.

Thick and Bold Chocolate Milk Shake

!/3 cup evaporated skim milk
1 1/2 Tb Sugar free pudding mix (chocolate or chocolate fudge)
1/4 tsp sweet n low bulk
5-7 medium to large ice cubes
2 tsp. unsweetened cocoa powder
Cool Whip for garnish
1/2 cup water or more if needed
1TB. sugar free Hershey's Syrup in place of one tsp, of the cocoa if desired

Put everything in the blender except the ice and Cool Whip
Add 2 ice cubes and blend
Add ice one more cube at a time
Add ice until as thick as you like and fully blended

Pour into a large 12-16 oz. glass or insulated tumbler
Add Cool Whip and a spoon

Alternate version
Substitute 1 1/2 - 2 envelopes reduced calorie hot cocoa mix for the pudding mix.

Makes one or two servings.

Eggs For Royalty


I am eager to jot down this recipe for egg salad and olives. It is especially gratifying and filling. Another tasty and non-fattening, nutrient dense combination that will make you happy.

4 eggs
1/3 cup of your favorite mayonnaise type dressing-- this is where you can cut calories or not-- that's up to you.
salt
sweetener
15-18 olives
lettuce
vinegar 2 tsp.

Hard boil the eggs by placing them in a sauce pan with enough cold water to cover, and bringing them to a boil, but not before adding a teaspoon of vinegar. Boil a couple of minutes and let set for twenty minutes covered with a lid. Boil again for a minute, and then pour off the boiling water and drown the eggs with cold water by placing them in a plastic bowl of cold water, or ice water, and then one by one removing them, and, cracking the shell, to peel, Keep the bowl of water and eggs chilled until they are all peeled. Discard the shells and slice the eggs into 1/4 inch cubes. Add dressing, salt, 1 tsp, vinegar and sweetening equal to 2 tsp, sugar. Leave pimento stuffed green olives whole and put on top of the egg salad. You can add a little seasoned salt if you want or not. It may be best with regular salt so you can really taste the olives.
When you are ready to eat it, take large leaves of any lettuce you like and stuff them with the egg salad, add a couple more olives to the wrap and roll up and eat. You could also layer two lettuce leaves like a sandwich and stuff them with the egg salad. You should also salt the outer leaves of the wrap or sandwich so this won't taste too bland. Use regular table salt.

Pineapple Smoothie


The pineapple beverage I am telling you about looks like the vanilla; the taste is a happy surprise since instead of the typical taste you have an even fruitier sensation.

This image is cut from a photo for milkshakes from Spuds Drive-in in Briggs Idaho, a home town drive-in known for beautiful Idahoan views. It is merely a model for my pineapple smoothie. I am not from Idaho but the drive-in is my favorite type of fast food on many occasions and they have a wonderful menu.

My recipe is from Dole's pineapple juice, frozen concentrate, ice, banana and vanilla.

About 5 oz of frozen banana
6 oz of water
5 ice cubes
1 TB frozen pineapple juice concentrate
3 TB splenda or 2 1/2 pkts = sweetener
1 tsp. vanilla extract

It is nice flavored with cherry also, just add a scant tsp. of kool-aid powder in cherry.

I'll give a chocolate fudge next round.

Chocolate-Jello 'Mock Nesselrode Pie'

5 cups of skim or low fat milk
2 envelopes Knox gelatin (unflavored gelatin)
sweetening = 1 1/4 cups sugar
6 TB cocoa
1 tsp vanilla
1 TB salt

dissolve gelatin in 1/4 cup of the milk by sprinkling over cold milk and letting gel up Then heat over low heat until gelatin is dissolved into liquid with no granules left.

Add the rest of the milk,the cocoa, sweetening and simmer until the chocolate dissolves. Add vanilla and salt and and pour into 9x9 inch glass pan.

After set divide with plastic spatula into serving squares, takes about three to five hours.

Eat this with low fat "cool whip."
Also, the Cream Cheese Cookies make it most filling--trim2thebrim;]

You don't have to make (see note*)to put on top--for diet version use all sugarless ingredients.
  • 8 ounces Oregon Fruit canned cherries in syrup (or other fruit)
  • 1/2 cup chopped candied fruit (fresh or drained canned pineapple may be substituted if you dislike candied fruit)
  • 1/2 cup good quality orange marmalade
  • 1/2 cup chopped candied ginger
  • 1/2 cup dark rum
 Note*the nesselrode sauce 

Butter Peanut Cookies (egg-free)


I have a new recipe for egg-free cookies. I am really surprised how good they taste. This one is buttery peanut butter.


6 TB 70 calorie margarine
1/2 cup plus 2 TB of peanut butter preferably Natural
1/2 cup Splenda or = valent
2 tsp milled flax seed
1 tsp water
1 1/2 tsp baking soda
1 1/2 TB imitation low calorie mayonnaise (heaping TB)
1/3 cup nonfat dry milk powder like Sego or Carnation

Combine everything in a small to medium sized bowl
Drop by half TB onto baking pan and bake at 350 degrees F until set like a toll house cookie, 8 minutes or so.

Remove from pan carefully with a metal spatula.


Makes about 30 cookies.
45 calories ea. but only 2.5 carb. Gr.

I always like a couple of these, three if I'm famished with vanilla yogurt or vanilla yogurt with frozen berries, sugar less versions of all. It is very filling. A splurge and a great meal substitution, protein, milk and fruit all at once.

Meatball Sandwich



This is so good. Cheese sauce mix is mixed together with mild sausage and a few more things to make meatballs, that you put on a few large lettuce leaves with ketchup, mustard and mayonnaisse, something like cheese-y barbecued spareribs -- boneless spareribs.

Take one pound of mild pork sausage:
Add: 1/2 cup of nonfat dry milk powder
1 1/2 shredded -- Pared and shredded raw carrots
1 Tb. dry cheese sauce mix from a box of macaroni & cheese
Add one whole egg, which makes it gooey but it will hold together, you may like to drop into the skillet with two spoons, one large from dropping and one small for shaping.
Mix this together and drop by Tablespoon into a large skillet
Braise in the skillet with a little water (spray with pam first if you like) being careful not to scorch the meatballs, brown slightly adding a little water continuously so the meatballs don't burn or stick to the pan, use a lid to help in cooking through.
"Fry" in this manner a few minutes (maybe four or five) and work in batches until the meatballs are all done.

Store in layers in a plastic container separating with plastic or foil or serve NOW.

When ready to eat, either warm up the meatballs, or proceed immediately after cooking to pile onto a plate two or three nice outer lettuce leaves, folded in half if necessary to make a layer about the size of a piece of bread. Make another lettuce Layer for the top, but don't put it on until you add ketchup, mustard, mayonnaise or salad dressing with a =1tsp. of artificial sweetener on top of it all for a "secret" sauce.

You can see the brown sausage meatballs and the crunchy iceberg lettuce in the pictures. ;]♡

Here are the somewhat charred meatballs, good anyway. The next batch I braised more carefully -- but gets the idea presented.

Three or four of these are pretty satisfying like this.

This makes about 20 1 1/4 inch meatballs.

Broccoli-Carrot-Raisin Salad


Something sweet, crunchy and good doesn't have to ruin your physique. Vegetables tossed together with a few other ingredients can be so tasty, you will prefer the dish over a Butterfinger Chip candy.

Recipe:
1/3 bag of frozen broccoli or broccoli and cauliflower
2 large carrots, pared and cut into thin round slices
2 TB. of dark raisins
2 TB. of French dressing
sweetening equivalent to 2-3 tsps. of sugar

Remove the frozen vegetables from the freezer. If you are using cauliflower, you will have to add them to the pan of carrots after about 5 minutes and simmer another 2 minutes. If you are using broccoli you can simply defrost and add to the warm carrots.

Prepare the carrots. Put in a large skillet with 1/4 cup of water and simmer about 6 minutes until almost soft or to taste, adding more water by the tsp. if the water runs low. In the end there ultimately should be no water in the pan and the carrots should be a little softened.

Place the carrots and other vegetables in a bowl to chill, if using defrosted broccoli you can set aside with a cover on top and let the carrots cool like this.

When the vegetables are cool add the raisins, the dressing, the sweetening and 1/2 tsp. of salt.

Eat, or chill for later.

One or two servings.

Cream Cheese Cookies


3 ounces of cream cheese
4 TB 70-80 calorie a TB margarine
1 egg
5 TB Sego Buttermilk (non-fat dry buttermilk that reconstitutes into buttermilk) mix
Baking powder 1 Tb
Artificial Sweetener equivalent to 2/3 cup sugar
1 tsp. vanilla

Baking Sheet
350 degree oven.
Mix and spoon onto baking (cool) sheet
Bake 6-8 minutes

Makes about 30 cookies, 25 calories each and 3 grams carbohydrate

Hot Peanut Salad



Recipe:

1/2 package or more (1 2/3 oz.)
spicy hot peanuts
hearts of lettuce
2-4 TB. Raspberry Walnut Vinaigrette (reduced Calorie is good)
1-2 peeled and shredded carrots if desired

Tear the lettuce hearts into chunks
Peel and shred the carrots
Toss together with the peanuts and dressing.

Really good side or snack.

Green Beans on a Diet



A quick fix for a huge appetite, or to feed a small family on the side with a meat entree´, 16 oz can of beans and tomato sauce(only use 8 oz.of tomato sauce), salt, one tsp. splenda and two TB of chopped frozen onion. One to five portions.
