A Bread Salad

Italian people love bread salad to finish off a little oil and vinegar dressing and some stale bread. Fat people do not love bread salad because it is stuffed with fatso carbs. Not if you use bread substitutes like this one.

Faux Bread Salad from Little Italy, Kentucky

1 to 1 1/2 cups of Partially crushed hot seasoned Pork Rinds, any brand [such as at the end of the bag]
3/4 to 1 cup shredded and torn lettuce
4 very thin slices of sweet onion
2 TB Miracle Whip salad dressing [white mayonnaise type]
a little seasoned salt like Spice Island
artificial sweetener equal to 1 1/2 Tb. of sugar

On a plate pile the first three ingredients. Place the dressing in the center and top with the seasonings. Present with a fork to each eater to be tossed with the fork by them.

Ice Cream

1 can evaporated fat free milk milk
3 tb cocoa
2 Tsps. sweet and low or less (this is bulk sweet n' low)
tall container like an old cool whip 16 oz size or a mixing bowl for whipping whipped items -- a tall narrow one

Chill the can of milk, you can open it first if you like, also chill the beaters
After about 2 hours whip the milk with the mixer and beaters attached until high and soft peaks form, add the flavoring and sweetening.
Detach the beaters and leave in mixing bowl. Freeze for an hour
Remove from the freezer and re attach beaters tomixer once more beat until high in the container, remove the beaters and leave in the mixing bowl and refreeze.
Keep on re attaching the beaters after about an hour in the freezer and beating until high twice more. Voila.
This obviously is almost gone. It is nice for slicing with a steak knife or other sharp knife and layering between protein cookies or meringue shells, too.

Salad (w/relish added)
Velveeta Shreds
Sweetener. You can also add diced or sliced ripe olives (medium size is good) as this will make this go further. The salad dressing in this recipe says 'sandwich spread' on the label. It is at Walmart next to the Mayo.
If you want take some iceberg lettuce leaves as if you're making a wrap with natural peanut butter spread on top of one-half of one side of it, to the other half of this layer or side of the wrap add a Tablespoon of this cheese salad. Roll up and sprinkle the outside with a little salt.

Vinegar and Oil Barbecue Dressing

1/2 cup water
1/4 cup oil
1/2 cup vinegar
1 1/2 packets of sweetener
1 - 1 1/2 tsp. salt
Oops forgot the spice--2 tsp. Mrs. Dash extra-spicey or to taste (a little more is ok) It looks quite pretty mixed into the liquid ingredients.

Mix, use on salads.

Image from
This is what Extra-Spicy Mrs. Dash appears like on its own.  You will love it. This is nothing like Italian. Vary the oil and use however much water you prefer. I use plain white vinegar. Do not use pickle juice!

Braised Cabbage and Carrots

1 Large head cabbage sliced
3-4 large carrots peeled and sliced
1/2 or more of a large onion
2 Tb salt
Water to cover
Large stock pot
Simmer over stove on medium until tender
Freeze in 5X3 inch aluminum loaf pans
Makes 5-6 loaf pans of braised cabbage.

Vanilla Cream

1 cup coffee creamer
14 cups water
8 Tb [4 of them rounded if you want it richer and creamier] corn starch
2 cups sugar equivalent so as to be equivalent
1 generous Tb margarine or butter
1 Tb salt
1 TB vanilla extract

Thicken in stock pot over medium heat. Not including the butter or vanilla until it finishes boiling one minute or so. Stir with whisk and large soup spoon so the cornstarch stays evenly distributed and does not sink to the bottom. It is a little runny for eating as it is at this point but cream-sickle enough when frozen.
Freeze in pints such as empty cool whip tubs.
Add protein cookie crumbs over top of pudding.
Makes 8 tubs. Saw in half to serve after frozen.
